I’m so excited to be co-hosting a bridal shower for my BFF’s daughter! We want the shower to reflect the bride-to-be. Shannon is gorgeous, fun, loves mimosas, and is a vegetarian. Knowing that we decided to hold the shower late morning so we could serve mimosas with a light brunch – yum!
Before finalizing our menu, we need to test two vegetable tart recipes – I found two recipes and both sound amazing! The first is an Artichoke, Roasted Red Pepper Tart. A simple puff pastry base filled with artichokes, roasted red bell peppers, leeks, gruyere cheese, and UYIF Greek Seasoning. It was easy to assemble, can be served hot or at room temperature, and looks beautiful. We loved the crispy puff pastry base and the savory filling was delicious! It was so good we decided not to try the other tart – why mess with deliciousness.

I don’t know about you, but I love researching recipes and planning menus. To me, the best part is cooking, tasting, tweaking the recipes and menu items to create that perfect pairing. I used to think all of this was just second nature but quickly realized it takes organization followed by more organization to throw a memorable gathering.
You too can achieve it with these three helpful tips:
1. Keep the food simple and limit the courses.
2. Choose dishes that can be made in advance and serve buffet style so you can be a part of the party!
3. Follow the Barefoot Contessa’s #1 rule: Make one dish and assemble the others. Like a salad, cheese platter, breads, and a large platter of fresh fruit.
