I came across a new recipe on Pinterest that I MUST include with my Super Bowl menu – Sweet & Sour Bacon Wrapped Pineapple. She had me at “bacon wrapped”! Here’s the recipe:
Ingredients:
20 oz. can of Pineapple chunks or fresh if available.
5 strips of turkey bacon or regular bacon, cut each piece into 6 equal size pieces (to wrap around the pineapple chunk)
Dry the pineapple chunks between two pieces of paper towel and wrap each one with a bacon strip, secure with a tooth pick.
Sauce: 2 Tblsp. Brown sugar, 1/4 cup Ketchup, 1/4 cup Chili sauce, 1/4 cup water, 1/4 cup grape jelly, 2 Tblsp. apple cider vinegar, 1/2 tblsp. Worcestershire sauce, 1 Tblsp. fresh garlic, minced.
Preheat oven to 350 degrees. Line a small baking tray with parchment paper. In a medium saucepan on high heat, combine all the sauce ingredients. Bring the sauce to a boil, turn the heat down to medium and let the sauce simmer until it begins to boil. Turn the heat down to medium and let the sauce simmer until it begins to thicken, about 5-10 minutes. While the sauce simmers, wrap each pineapple chunk with the bacon. Place on the prepared tray and pour the sauce evenly over the top. Bake for 30-35 minutes until the sauce is sticky and thick and the bacon is fully cooked. Enjoy!
