Grilled Mediterranean Chicken Kabobs served over a bed of Couscous Salad and fresh green beans with chopped fresh mint leaves. Talk about a menu that will WOW your family & friends at your next backyard gathering! Thank you Wolfgang Puck for this amazing recipe!
Let’s talk about easy; 1.) The couscous salad can be made the night before or early in the day. While the couscous is cooking (that’s 5 min), chop up the veggies and make the vinaigrette. 2.) The chicken cubes only need to marinate for 1 hour, so you can make those before your guests arrive! 3.) Fill 4 wooden kabob skewers with the chicken skewers and wrap the exposed ends with aluminum foil to prevent them from burning and breaking off inside the chicken. 4.) Get the grill fired up and place the couscous on a large platter and let sit at room temperature while you grill the chicken kabobs, 5.) Place the grilled kabobs on top of the couscous to create an impressive yet casual look – remember we eat with our eyes first! I found some eatable flowers at the market to garnish the plate – it was so beautiful! How easy is that?! Seriously, everyone kept saying; ooh this is so good. How fun is that! Pair this with a cool Pinot Grigio and you will have a match made in heaven. Enjoy!
