If I had to choose just one food that represents this time of summer it would be sweet corn. Yes, my favorite way to eat sweet corn is right on cob with Hope butter – a must, and lime zest. We’ve been invited to a BBQ tomorrow at the home of one of our foodie friends and I offered to bring a farm-to-table appetizer. I decided to put a twist on my favorite bruschetta and replace the tomato with farm fresh sweet corn! This is a killer recipe and so easy to make. Here’s what you do: Prpeare your grill to medium heat. Husk 3 ears of corn, grill until well charred, about 5 -8 mnutes. Cut the kernels off the cob and place in a bowl. Add 1.5 Tblsp minced shallots, 1 jalapeno, seeded and finely diced, drizzle with a little extra virgin olive oil. Toast baguette slices, slather with mascarpone cheese and place the corn mixture on top, pressing into the cheese so it sticks. Garnish with rough chopped basil and serve. Delicious!
