It’s transition time for this foodie. It’s the time of year where I’m looking forward to replacing root vegetables and rich, comfort foods with spring foods -Colorful spring veggies and fruits are the ticket to helping me reset my body after a long winter of overindulging!
As a cookbook junkie, I set out to find some new, fresh recipes that would complement my summer menu planning guide. I ran across a Cucumber-Clementine Salsa recipe in Gwyneth Paltrow new cookbook; “It’s All Good, Delicious easy recipes that will make you look good and feel great” that I’ve added to my Must-Try Recipe file. It’s a combination of clementines, baby cucumbers, red onion, red chili, mint leaves and fresh lime juice. Doesn’t that sound great! I’m going to make it tonight and serve it with my Chipotle-Lime Shrimp Tacos. Bon Appetit!
