Who doesn’t like watermelon? It’s the all-American fruit associated with fun, family and the 4th of July! Did you know that it’s also “heart healthy?” According to the National Watermelon Promotion Board, watermelon boosts your health esteem and is chock-full of Vitamin A, C, and a good level of B6. Nutritionist, Elizabeth Sommer says, heart health begins with fruits and vegetables. The more fruit and vegetables you eat, the lower your heart disease risk. Watermelon is an excellent source of lycopene, a red pigment. Watermelon has more lycopene than do tomatoes, up to 20% mg in each 2 cup serving. It’s also low or free of cholesterol, fat and sodium. No wonder my friend calls it “food of the Gods!”
In addition to eating tons of cubed watermelon and adding it my salads, I came across a Watermelon Salsa recipe that I’ve doctored up a bit – I know you’re going to love it! It’s so nummy! I like to serve it with Stacy’s Cinnamon-sugar Pita Chips or Corn Tortilla chips for all my GF friends. Enjoy!
