I love this easy and out of this world, delicious summer pasta dish! I had breakfast with my friend Juli last week and of course our conversation turned to food and entertaining. We were chatting about how much we love summer and shared our favorite summer recipes. My mouth was watering as Juli described her favorite, go-to summer dish - I couldn’t wait to get home and make it!
This recipe has all my favorite summer ingredients; tomatoes, fresh basil, garlic, and pasta… It takes 10 minutes to make – making it the perfect weeknight entree as well as a fantastic dish to serve at your next gathering. Pasta with Fresh Basil, Tomatoes and Cheese
Serves 6-8
| Ingredients | Amount |

| Tomatoes, cut into 1/2 inch cubes | 4 large |
| Fresh Basil, julienned | 1 cup |
| Garlic cloves, minced | 3 |
| Extra Virgin Olive Oil | 1 cup |
| Pasta ( I used Tagliatelle) | 1 – 1/2 lb. |
| Kosher Salt | 2- 1/2 tsp. |
| Fresh Ground Pepper | 1/2 tsp. |
| Fresh grated Parmesan Cheese | 1/4 cup, add more to your liking |
Directions:
1. Combine the tomatoes, basil, garlic, olive oil, salt and pepper in a large serving bowl. Prepare this at least 2 hours before serving and set aside at room temperature.
2. Bring 6 quarts of water to a boil. Add 1 tblsp. of olive oil and a pinch of salt. Add the pasta and cook 8-10 minutes
3. Drain pasta and immediately add to the tomato mixture. Toss with the Parmesan cheese and serve.
