Antipasta Salad Kabobs are perfect to add to any appetizer menu – they provide a “light” choice and balance to your typical football snacks! Simply skewer your favorite antipasta ingredients, drizzle with a little olive oil, sprinkle with fresh ground black pepper and you have a mouthwatering appetizer fit for any winner. I like to use a cured salami, sliced thin with mini mozzarella balls, green piemento stuffed olives, roasted red peppers, and baby mesclyn leaves.
Cheesy Jalapeno Bacon Dip with Tator Tot Crust – This recipe received a two thumbs up from my husband who thinks tator hotdish is a waste of a perfectly good tator tot! 3 kinds of cheese makes it so cheesy. A little jalapeno adds a kick. Then there is bacon and if that’s not enough it’s topped with tator tots and baked until the top is crispy and the dip is hot and bubbly.
