I ran across this recipe today in my “Must-Try” file and couldn’t wait to share it with you. It’s amazing, full of crunch, hint of sweetness from the Medjool dates, hint of spice from the red onions, and a delicious vinaigrette. Wish I knew where I got it from as I’d like to give proper credit!
Like all foodies, I changed the recipe a bit. This is a recipe I will dream about!
Brussel Sprouts with Dates & Hazelnuts
1 lb. brussel sprouts, sliced thin
1 cup roasted hazelnuts, roughly chopped
3/4 cup sliced seedless Medjool dates
1/4 cup red onion, finely diced
Place in a bowl.
1/4 cup olive oil
1/4 cup apple cider vinegar
1/8 cup Maple Syrup
Zest of 1 orange
Juice of 1/2 orange
whisk together and season with kosher salt & Unleash Your Inner Foodie Tuscany Pepper Blend
Pour dressing over the brussel sprout slaw and mix well. Garnish with some of the orange zest. Serve on a large rectangle platter to showcase the beauty of this delicious salad! Enjoy!
