Holiday cookies are a tradition in my family – it’s just not Christmas without decorated sugar cookies, peanut blossoms, jam filled thumbprints, and apricot balls. Thanks to my friend Zoe of ” Zoe’s Gone Bananas” (the best banana bread on the planet), I have a new cookie that will be added to the McArdle Holiday Cookie tray. I’m not kidding, these are so good I couldn’t stop eating them!
When I called Zoe to thank her for the beautiful cookie tray, I shared that I could not stop eating the “sandwich” cookie and needed the recipe. She said -” it’s the simplest recipe in the world Dee, I can’t believe you haven’t had it before!” Once again, this recipe proves that the best dishes are the ones with the fewest ingredients. Zoe’s Ritzy Cookie Recipe:
1 box Ritz Crackers
1 container of Nutella
1 bag White Chocolate Chips
Holiday Sprinkles
Directions: Spread a little Nutella on the bottom of a Ritz cracker, place a second cracker on top and press together. Repeat this process to make as many sandwich cookies as you want. Refrigerate while you melt the white chocolate chips over a double broiler. Dip the Ritz sandwich cookies in the melted white chocolate and place on wax paper to dry. Sprinkle the tops with holiday sprinkles. Yum!
Version #2: Substitute Peanut Butter for the Nutella and dip in milk or dark chocolate, so yummy!
