As the song says; I’m making a list and checking it twice. Not to see whose naughty or nice but to see who and what I may have forgotten! Let’s see – Gifts bought and wrapped, cookies made (thanks to my sister and daughter-in-law), menus selected, eggnog in the fridge, triple chocolate fudge made, and family arrives tomorrow. I’m ready for you Santa!
I had coffee with my good friend Ann yesterday, who introduced me to Mr. Wonderful 23 years ago! We talked about cooking, our children, menus, our husbands, recipes, our parents who are now in heaven, more recipes, and our most treasured family holiday traditions. Her mother’s Cranberry Cake has a special place in her heart and on her Christmas Day menu. It’s sooo good, I just had to share the recipe with you!
Elaine’s Cranberry Cake:
3 tbsp soft butter 1/4 tsp salt
1 c. sugar 1 c. milk
2 c. flour 3 c. fresh cranberries
3 tsp baking powder
Beat all ingredients, except cranberries. Fold in berries. Spread in greased 9″ square pan.
Bake @ 350 for 25 minutes
1 c. sugar 1/2 c. cream
1 tbsp flour 1 tbsp vinegar
1/2 c. butter 1 tsp vanilla
Heat all ingredients, except vanilla until hot and bubbly. Add vanilla. Stir.
Pour over cake. Enjoy!
