I love New Year’s Eve! For me, it’s always been a great combination of reflecting on the past year and anticipating what’s to come. Our new year’s tradition always revolves around family and friends at the cabin. We reminisce about past new years celebrations like “The Big Fish Story”, where each family told their lie (I mean story) about the one that got away, or maybe the “500 card playing tournament” that went on-and-on-and-on, and we’ll definitely talk about out traditional game of “Clue” and how we always lose to Shannon… Too fun!
This year our gang is going to Ring in The New Year with cocktails, appetizers and yes you guessed it, a card playing tournament! I’m going to bring the fixins for a perfect Manhattan – my new favorite cocktail, Crab Pinwheels ( a delicious recipe from my friend Peggy), and Teriyaki Chicken meatballs skewered with pineapple chunks and an orange marmalade sauce. Yummy!
Perfect Manhattan: Makes 2 cocktails; 5 oz. bourbon or rye whiskey, 2 oz. sweet vermouth, 6 dashes Angostura bitters, 2 maraschino cherries. 1.) Fill 2 cocktail glasses with crushed ice, then set aside to chill. 2.) Fill a cocktail shaker halfway with ice cubes, then add the bourbon or whiskey, vermouth, and bitters. Stir well. 3.) Strain drink into the chilled glasses. Garnish with a marashcino cherry. Enjoy!
Package of Burrito size flour tortillas – plain or roasted red pepper.
16 Oz Light Cream Cheese
1/3 C Light Sour Cream – more to thin the consistency, if needed
Mix well and add:
2 T finely chopped Red Onion
2 Tblsp. Prepared Salsa (medium heat!)
1- 2.25 oz can black olives – chopped
1/2 package Imitation Crab meat flakes- chopped
Mix up seasonings and spread a thin layer over a flour tortilla, which has been placed on top of a sheet of plastic wrap. For a little extra kick, sprinkle a little more of the Chipotle pepper over the top of the tortilla, roll up and wrap tightly in the plastic wrap. Refrigerate three hours, slice into 1/2 inch slices before serving. Makes about four Tortilla roll ups. Can be served alone or with salsa for dipping.
Alternative serving suggestion: mix and serve as a spread with crackers.
Teriyaki Chicken Meatballs with Pineapple:
1 package Teriyaki Chicken Meatballs from Costco
1 can Pineapple chunks, drained
6 inch flat Bamboo Skewers
Dipping Sauce: 1 cup Orange Marmalade, 1-2 Tblsp. Dijon Mustard, 1 Tblsp. Honey. Heat in a small saucepan to blend flavors. Pour into a small clear serving bowl.
Directions: Thaw meatballs. Thread two meatballs separated by a pineapple chunk on each skewer. Place on baking sheet, brush lighlty with the orange marmalade sauce and bake according to meatball package directions. Remove to a serving platter and serve immediately. So easy and yummy!
