Pasta with Fresh Basil, Tomatoes and Cheese

Serves 6-8

Ingredients Amount
Tomatoes, cut into 1/2 inch cubes 4 large
Fresh Basil, julienned 1 cup
Garlic cloves, minced 3
Extra Virgin Olive Oil 1 cup
Pasta ( I used Tagliatelle) 1 – 1/2 lb.
Kosher Salt 2- 1/2 tsp.
Fresh Ground Pepper 1/2 tsp.
Fresh grated Parmesan Cheese 1/4 cup, add more to your liking

1. Combine the tomatoes, basil, garlic, olive oil, salt and pepper in a large serving bowl. Prepare this at least 2 hours before serving and set aside at room temperature.
2. Bring 6 quarts of water to a boil. Add 1 tblsp. of olive oil and a pinch of salt. Add the pasta and cook 8-10 minutes
3. Drain pasta and immediately add to the tomato mixture. Toss with the Parmesan cheese and serve.
