|Tomatoes, cut into 1/2 inch cubes||4 large|
|Fresh Basil, julienned||1 cup|
|Garlic cloves, minced||3|
|Extra Virgin Olive Oil||1 cup|
|Pasta ( I used Tagliatelle)||1 – 1/2 lb.|
|Kosher Salt||2- 1/2 tsp.|
|Fresh Ground Pepper||1/2 tsp.|
|Fresh grated Parmesan Cheese||1/4 cup, add more to your liking|
1. Combine the tomatoes, basil, garlic, olive oil, salt and pepper in a large serving bowl. Prepare this at least 2 hours before serving and set aside at room temperature.
2. Bring 6 quarts of water to a boil. Add 1 tblsp. of olive oil and a pinch of salt. Add the pasta and cook 8-10 minutes
3. Drain pasta and immediately add to the tomato mixture. Toss with the Parmesan cheese and serve.
