Apricot Coconut Balls

Makes 30. Part of the Weekend at the Cabin Menu.

Ingredient Amount
Dried Apricots 1 cup
Flaked Coconut 1 cup
Chopped Pecans 3⁄4 cup
Lemon zest Zest of 1 lemon
Lemon Juice 1 Tbsp.
Orange Juice 1 Tbsp.
Powdered Sugar 2 1/3 cups


  1. Line a cookie sheet with waxed paper; set aside.
  2. Place apricots, coconut, and nuts in a food processor; cover and process until finely ground.
  3. Transfer ground mixture to bowl of your Kitchen Aid. Add lemon zest and juices; stir until combined.
  4. Add 2 cups of the powdered sugar. Stir until firm.
  5. Form into 1 inch balls using a small ice cream scoop or your hands.
  6. Allow to dry at room temperature for at least 4 hours.
  7. Dust with powder sugar before serving.
