Baked Oatmeal

This amazing recipe was adapted from the Naniboujou Lodge in Northern Minnesota.  It’s one of my favorite dishes to serve for breakfast winter, spring, summer, or fall – everyone loves it!  Baked oatmeal has the consistency of a coffee cake and can be served as such, or serve it in a bowl topped with some milk.  Add some breakfast sausage or bacon, a glass of fresh squeezed juice and you have a lovely feast perfect for family & friends!

Baked Oatmeal
Serves 6

Ingredients Amount
Eggs, lightly beaten 3 large
Milk, I prefer Coconut milk 1 3/4 cups
Corn oil 1/2 cup
Vanilla 1 tsp.
Oatmeal, Old Fashion Rolled Oats 4- 3/4 cup
Baking Powder 2 tsp.
Salt 1- 1/4  tsp.
Cinnamon 1 tsp.
Nutmeg 1/2 tsp.
Walnuts or Pecans, chopped 1 cup
Coconut flakes 1 cup
Blackberries 1 cup

Directions: Preheat oven to 300 degrees.
In a small bowl, combine the and mix the eggs, milk, corn oil, & vanilla. In a large bowl, mix the remaining ingredients. Add the milk mixture. Pour into 8 inch square baking dish ( I spray the baking dish with cooking spray. Bake approximately 45 minutes, or until firm. Serve warm with a dollop of Greek yogurt – so yummy!   Can be refrigerated for at least 2 days.
