Lucia’s Bean, Sausage, & Beer Chili

Adapted from Lucia’s Restaurant

Ingredients Amount
Onion, chopped 1 medium
Red bell pepper, diced 1
Green bell pepper, diced 1
Garlic, minced 3 cloves
Lean ground beef 1 lb.
Mild or hot Italian Sausage 1 lb.
Ground cumin 2 Tblsp.
Paprika 2 Tblsp.
Dried Oregano 1 Tblsp.
Cayene pepper 1/2 tsp.
Dark beer 1-2 cups
Can of Fire-roasted diced tomatoes 28 oz.
Red Kidney Beans, drained 15 oz.
Black Beans, drained 15 oz.


Sauté veggies in a Dutch oven.  Add the hamburger and sausage, cook until meat is no longer pink.  Stir in seasonings.  Add beer, simmer 4-5 minutes, then add the beans.  Bring chili to a boil, reduce to low, cover and simmer 30-45 minutes.  Serve with shredded cheese and sour cream.
