You’ll want to make a double recipe as this goes fast!!!

Ingredients Amount
Orange bell pepper,  seeded & diced 1
Yellow bell pepper, seeded & diced 1
Red bell pepper, seeded & diced 1
Watermelon, seeded & diced 1 – 2 cups
Jalapenos, seeded & diced 1-2
Cilantro, roughly chopped 1/2 cup
Juice of lime 1
Red onion, diced 1/2 cup
Kosher Salt to taste
Honey 1 tsp.

Directions: Mix all ingredients together. Taste and adjust for seasoning. Let sit an hour for flavors to meld. Serve with Garden of Eatin’ Organic Yellow Corn Chips – so yummy! Watermelon, Mozzarella, & Mint Skewers

Ingredients Amount
Olive Oil to drizzle
Seedless Watermelon, cut into 2 inch cubes 12 cubes
Mozzarella balls 12
Fresh mint leaves 12
tooth picks or small skewers 12
Kosher Salt & Pepper to taste Optional

Directions: Assemble onto the picks. Place on a serving platter or in a rectangle shape, unbreakable, plastic container for the boat. Drizzle with the olive oil, season lightly with salt & pepper. Enjoy!

Melon Balls with Proscuitto

These are  sooooo good!  Choose your favorite melon or serve a variety as pictured.  use a small melon baller to cut the number needed.  One slice of prosciutto is all you need per melon ball.  Use small wooden pick, thread the prosciutto first, and then the melon ball.  Will keep in fridge for several hours so you can make these ahead of time.  Enjoy!
