Casablanca Burgers

Ingredients Amount
Ground Beef, 85% lean 1 lb.
Dried Apricots, finely diced 1/3 cup
Pine Nuts, toasted 2 Tblsp.
Fresh Cilantro, chopped 2 Tblsp.
Garlic, minced 2 cloves
Kosher salt 1/2 tsp.
Ground Cumin 1/2 tsp.
Ground Cinnamon 1/4  tsp.
Ground Coriander 1 tsp.
Fresh ground black pepper 1/4  tsp.
Brioche buns 4 or 8 mini
Moroccan Ketchup recipe
Red leaf Lettuce 4
Roma Tomato, slices 3

Directions:  In a large bowl, combine the beef, apricots, pine nuts, cilantro, garlic, salt, cumin, cinnamon, coriander and pepper.  Shape mixture into eight mini burgers.  Prepare a grill.  Grill patties over medium heat about 15 minutes, turning once.  Serve burgers with Moroccan Ketchup, lettuce and tomato slices on Brioche buns or Hawaiian buns will do as well.

Moroccan Ketchup:  In a small bowl combine 1/3 cup ketchup, 1/8 tsp. cumin, 1/8 tsp. ground cinnamon, 1/8 tsp. ground coriander and 1/8 tsp. ground black pepper.
