Makes about 2 cups
|Clementines, peeled and chopped into 1/2 inch pieces||4|
|English cucumber, seeded and diced into 1/4 inch pieces||1/2|
|Red onion, diced||1/4|
|Red Chili, seeded and minced||1⁄2 – 1|
|Fresh mint leaves, chopped||8-10|
|Kosher Salt||to taste|
Combine clementine, cucumber, red onion, chili and mint in a bowl. Squeeze all the juice of the lime into the salsa. Sprinkle with kosher salt to taste, toss to combine. Enjoy!
* excellent served over fish, tossed into a salad, or with tortilla chips. I like to fill mini won ton cups with this delicious salsa!
