Ginger Asparagus with Cashews

Serves 4

Ingredients Amount
Peanut or Safflower Oil 1 Tblsp.
Asparagus, cut in half 1 lb. or 16 spears
Fresh Ginger, peeled & cut into fine matchsticks 1/2 inch
Grated zest on fresh Orange 1
Soy Sauce 1 Tblsp.
Sesame Oil 1 Tblsp.

Directions:
1.  Heat the oil in a wok or large skillet, add the asparagus & ginger.  Stir-fry for 4 minutes.
2.  Add the cashews, orange zest, soy sauce, & sesame oil and continue cooking for 1 minute.
Serve immediately.
