Heirloom Tomato Galette with Honeyed Goat Cheese, Caramelized Shallots, & Fresh Thyme

Heirloom Tomato Gallete with Honey Goat Cheese, Caramelized Onions, & fresh Thyme
Serves 6-8

Ingredients Amount
Olive Oil 2 Tblsp.
Shallots, diced 4
Goat cheese, crumbled 8 oz.
Honey 2-3 Tblsp.
Heirloom tomatoes, sliced 2-3 depending on size
Kosher salt & fresh black pepper 1/2 tsp.
fresh Thyme leaves 2 Tblsp.
Egg, beaten 1
Prepared pie crust 1

1.  Prepared pie crust of your choosing.  Roll pie crust onto a parchment lined baking sheet.
2.  Crumble goat cheese in a circular motion over the rolled-out dough, leaving roughly 2 inch border along the crust edges.  Drizzle a heavy serving of the honey over the  goat cheese and place in fridge until you have caramelized the shallots.
3.  Preheat oven to 375 degrees.
4.  In a small skillet combine the olive oil and the shallots and saute over medium-high heat until the shallots are lightly caramelized – about 7-10 minutes.  Remove from the pan and place on a plate lined with paper towels to drain any excess oil.
5.  Take out the pie crust from the fridge and top the goat cheese/honey with the shallots.
6.  Place the sliced tomatoes on top, leaving a 2 inch border around the pie crust edge.  Season liberally with the kosher salt & fresh ground black pepper.
7.  Drizzle additional olive oil over the tomatoes and lastly sprinkle with the fresh Thyme leaves.
8.  Fold up the edges of the pie crust  around the tomatoes, brush the crust with the beaten egg.  Bake for 1 hour until the crust is golden and the tomatoes begin to char.  Cool for 5 minutes.  Cut into pie wedges and serve.  Enjoy!
