Lemon Bars

Ingredients Amount
Butter, softened 3/4 cup
All-purpose flour 1  1/2 cups
granulated Sugar 1/3  cup
Topping:
Eggs 4
All-purpose flour 5 Tblsp.
granulated Sugar 2 cups
fresh Lemon Juice (2-3 lemons) 3/4 cup

Directions:
1.  Preheat oven to 350 degrees.
2.  Mix butter, flour, and sugar until combined.  Press mixture into the bottom of a 13 x 9 ungreased baking pan.  Bake for 20 minutes, or until just turning brown.
3.  Make topping:  Lightly whisk the eggs.  In a separate bowl, mix the flour and sugar together.  With a wooden spoon, gently stir the flour mixture into the eggs.  Add the lemon juice, stir, and pour the mixture immediately over the shortbread base.
4.  Bake for 20 minutes or until the top is firm to the touch.  Cool, sprinkle the top with power sugar.  Cut into 2 x 2 inch pieces.  Enjoy!
