Ingredients Amount
Olive Oil 1/4 cup
Small onion, diced 1 small
Red Pepper Flakes to taste
Cherry Tomatoes, halved 2 pints
Chicken Bouillon cube 1
Pesto 1/2 cup
Mozzarella, 1/2 inch cubes 1 cup
Salt/Pepper to taste
Tri color Pasta, any shape 12 oz
Parmesan cheese, grated garnish

Directions:  Heat olive oil in a medium sauce pan over medium heat.  Saute onion until translucent.  Add red pepper flakes and the bouillon cube and cook for 10 minutes.  Add the pesto.  After the flavors are incorporated, about another 5 minutes, fold in the mozzarella.  Immediately toss with the pasta.  Garnish with a sprig of basil and serve.  Serve with grated parmesan cheese.  Enjoy!
