Sweet Corn, Mascarpone Bruschetta

Ingredients Amount
Fresh Sweet Corn, grilled and cut off cob 3 cobs
Kosher Salt & Fresh Ground Pepper to taste
Mascarpone Cheese, softened 1 container
Baguette or Artisian Multigrain Bread, toasted 1
Shallots, finely minced 1. 5 Tblsp.
Jalapeno, seeded and diced 1

1.  Prepare grill for medium heat.  Hush corn.
2.  Grill corn until charred,about 5-8 minutes.  Let corn cool slightly and cut the kernels off the cob.  Place in a medium bowl and add the minced shallots and jalapeno.
3.  Toast baguette slices.  Spread with 1 Tblsp. mascarpone cheese and top with corn bruschetta mixture.  Pressing slightly so corn adheres to the cheese.
4.  Serve immediately.  Excellent warm or at room temperature.  Enjoy!
