Sweet Potato Hash & Eggs

Ingredients Amount
Sweet Potato, diced 1 large
Vidalia Onion, diced 1 medium
Thick cut Bacon, diced 4 slices
Kosher Salt 1⁄2 – 1 tsp.
Freshly ground Pepper To taste
Eggs 4

1.  Dice Sweet Potato into 1/2 pieces.  Boil until just tender.  Drain and set aside.
2.  In a medium cast iron pan, cook diced bacon until slightly crisp.  Remove bacon from pan and saute onion in bacon fat until translucent.
3.  Add the par-boiled sweet potato to the pan and saute until potatoes begin to caramelize, about 10 minutes.
4.  In the meantime, prepare eggs by frying or scramble – your choice.
5.  To serve, divide Sweet Potato onto two plates and top with eggs.  Garnish with chives.
