Extending Your Vacation Menu Results
Last week I shared a great entertaining idea for extending your winter vacation and promised some follow up. Here goes: The Mexican Throw-down. ..
The Venue: A semi-frozen lake in Northern Minnesota.
The Menu: Caborita’s (aka; Margarita’s with Cabo Wabo Tequila), DeeAnn’s secret Pico de Gallo, Judy’s secret Salsa, Barefoot Contessa’s Guacamole, Pulled Pork Tacos with Apricot-Jalapeno sauce (totally yummy), and Cinnamon Ice Cream (purchased, we cheated!).
The Music: Jimmy Buffet
What worked well: A nice balance of “heat” and freshness between the Salsa and the Pico de Gallo. Layered the flavor by first smoking the pork shoulder, and finishing it with a mixture of apricot jam, jalapenos and onions. Yum! Barefoot Contessa’s Guacamole is out of this world and was a great addtion to the tacos.
What didn’t work so well: Ran out of Tequila way too early! Too busy tasting the pork as we pulled it to take photos… Sorry!
The Result: A memorable experience for all!
