That is exactly what I did today! I met my good friend at this amazing French Brasserie in downtown St. Paul called The Meritage. We enjoyed an inspiring meal, and a great glass of wine in a beautiful setting. So inspiring that I felt I needed to blog about my favorite dish – the French Onion Soup.
It was outstanding! In fact, I think even Julia Child would have raved about this one. It was served in a beautiful white soup tureen with just the right amount of cheese melted down the sides of the bowl. The onions were a deep golden brown color that one gets only from cooking them slowly in butter and oil. The broth was a beautiful dark brown color with a rich, sweet full bodied flavor. Yum!
I decided to pull out my cookbooks and recreate my french onion recipe to achieve the same flavor that I enjoyed this afternoon. Stay tune for the results…
French Onion soup is a great dish to serve in the spring. I like to serve it with a simple mixed green salad and vinaigrette and finish with a chocolate truffle and a glass of port. Now that’s a memorable meal!
