There’s a reason the “grilled cheese” is the all American sandwich – who doesn’t love the buttery toast and gooey, cheesy filling! This classic sandwich brings back lots of fun childhood memories for me. As kids, our cheese of choice was what else but… Velveeta. Mother cut our sandwiches into quarters so we could dunk that gooey sandwich in tomato soup – yum!
Today, my cheese of choice is Fontina, Cheddar, or Mozzarella. All of these cheeses melt into the warm, gooey and stringy cheese we like. You can take your grilled cheese to the next level by adding fresh herbs, pesto, tomatoes, or bacon. One of my favorites: multi grain bread, pesto, mozzarella cheese topped with fresh basil – perfection! What’s your grilled cheese favorite combination?
